Gelatine powder is suitable to bind and strengthen such as cream, mousse, bavaroise, pudding and fruit jellies. Per liter of product is 20 gram gelatine powder needed in order to obtain a good reinforcement and 40 gram for a detached pudding.

Preparation: Add the needed amount of gelatine powder to the liquid. Heat to 40°C so that the gelatine dissolves. Caution: do not boil! Let the mixture cool down and stiffen in the cooling.

This gelatine has a Bloom of 150.

Gelatine can not be used in combination with the following fresh fruits: pineapple, kiwi, papaya, mango and ginger.

Ingredients: beef gelatine (E441). Bloom 150.

Allergens: gluten free, Kosher. This product is certified Halal.

    Bonjour , ne doit on pas hydrater la gélatine avant de la mettre dans nos préparation ?il faut directement la mettre dans les liquides chaud ?

    Merci pour votre question Célia. En effet, il faut réhydrater la gelatine en poudre avec de l'eau froide avant de l'incorporer à votre préparation chaude mais pas bouillante (la gelatine risque de perdre en intensité si elle bout).

    Dans la plupart des recettes, on parle de gelatine avec un pouvoir gélifiant (sous-entendu) de 200 bloom. La poudre gelatine de FunCakes est une gelatine 150 bloom. Il faudra alors calculer la bonne quantité de gelatine à incorporer dans votre recette avec ce calcul : (poids de gelatine demandé par la recette x 200) / bloom de la gelatine utilisée

    ex : la recette vous demande 4g de gelatine (par défaut à 200 bloom) et vous avez la poudre gelatine FunCakes de 150bloom. Il vous faudra (4x200)/150 = 5,3g de gelatine 150bloom

    5,3g de "gelatine" en poudre doit être hydraté dans 6 fois sa masse d'eau (5,3g x 6 =) 31,8g d'eau à ajouter. Après mélange, on obtient donc 5,3g + 31,8g = 37,1g de "masse gelatine".

    Le calcul de la masse de gelatine est le suivant (poids de la gelatine x6 ) + poids de la gelatine.

L'odeur est trop forte pour moi. Je regrette mon choix prochaine fois je prendrais l'Agar agar. Sinon il fait ce qu'on lui demande très bon épaississant - gélifiant.
