Tahiti vanilla is the latest from Norohy. It is a vanilla that has powerful and subtle odor characteristics. This vanilla has a floral and aniseed aromas with a touch of almond, tonka bean and balsamic.

The x Tahitensis variety is smaller than its Malagasy counterpart but larger and very concentrated in secondary aromas.

It can be used in pastry, chocolate and ice cream.

The history and characteristics of Tahitian vanilla

Commonly called the black gold of Polynesia, the Vanilla x Tahitensis orchid appeared in 1848, in a private garden in Tahiti, before being cultivated on a larger scale.

Compared to Vanilla Planifolia, x Tahitensis has a thinner stem and leaves. Unlike other types of beans, the fruit of Tahitian vanilla does not open naturally when ripe. It has an aromatic bouquet of more than 200 molecules.

Norohy has also favored a short circuit by sourcing as close as possible to the producer, with a concern for quality and traceability.

It is grown on the island of Tahaa by 200 growers and then processed on the island of Raiatea.

Each flower is pollinated by hand, and the fruits are harvested when ripe, 9 to 10 months later.

After browning the beans, they are then dried alternately in the sun and in the shade for several weeks. They then gradually take on their supple and shiny appearance. Finally, ripening completes the preparation of the beans and guarantees them good preservation. It represents less than 10% of the world's vanilla culture.
