Isomalt is a sweetener derived from sucrose. It has a power that is 2 times less sweetening than classic refined sugar. It resists a higher temperature and It sticks much less than sucrose.

This sweetener is particularly appreciated by pastry chefs for making sugar decorations.

Isomalt is a pure product and is resistant to humidity. It can be colored and flavored in its heated form.

Preparation of isomalt:

  1. Put 10g of water with 100g of isomalt in a saucepan.
  2. Heat over low heat while stirring.
  3. Remove the pan from the heat when the mixture reaches 170 ° C.

Warning: risk of burns

Note: above 185 ° C, the mixture gets darker.

    Bonjour Narcissa, merci pour votre question qui, qui nous en sommes certains, en aidera beaucoup d'autres.

    Pour utiliser de l'isomalt, il vous faudra utiliser un tapis vous permettant de supporter de fortes températures comme un tapis en silicone.

    Nous utilisons ce tapis au sein de nos ateliers : tapis en silicone Dékofee

    Il est en plus super facile à ranger et à entretenir.
