Ivoire was created with the purpose of obtaining a chocolate where the different ingredients are in perfect balance and, thus, obtaining a chocolate with milky and vanilla aromas.
It marries divinely with tangy fruits, as well as spices and can be used with aromatic herbs (mint, basil, lemongrass, dill, thyme, etc.).
To obtain a smooth and shiny chocolate, it will have to be tempered with a thermometer. It will be necessary to follow a temperature curve:
- Turn it up to 45-48°C
- Bring it down to 26-27°C
- And quickly rise to 28-29°C
Sugar, cocoa butter (35%), whole milk powder, emulsifier: sunflower lecithin, natural vanilla extract.
May contain traces of nuts and soy.
Store in a dry place, protected from air and light, between 10 and 18°C.
