The melting

It is best to use high quality couverture chocolates for making chocolates or for coating various cookies. To make it easier, melt a little more chocolate than necessary. always use chocolate in small pieces or in callets. Set the device to 50 ° C, ensure that the temperature does not exceed 45-50 ° C. Several hours will be needed before the couverture is completely melted.

The cooling

To obtain a beautiful gloss, the device must be lowered to 20 ° C and tempered by warming back to the ideal working temperature:

- 28-29 ° C for the white couverture chocolate

- 30-31 ° C for the milk chocolate couverture

- 31-31 ° C for the dark couverture chocolate

It is only at these temperatures that the couverture will have a nice gloss and harden. It is only at these temperatures that sugar, cocoa butter and cocoa mass mix optimally together.

L'appareil est très bien, de bonne qualité, facile à entretenir. C'est vrai que pour faire fondre le chocolat, c'est un peu long, donc moi je l'utilise plutôt pour conserver mon chocolat à la bonne température, le temps de le travailler
