Thanks to its caramelized and creamy taste, Gold goes perfectly with fruit (apple, orange, pear, dates, etc.). Or even with hot drinks (coffee, green tea, hot chocolate, etc.)
The different uses
Callebaut Gold is 3 out of 5 fluidity, which means you can use it for baking and desserts. You can also use it for confectionery (moulding, coating, decoration, etc.). It can also work in a piping bag to decorate your desserts.
Tempering
In order to obtain a shiny and very smooth chocolate, it will have to be tempered with a probe thermometer and follow a temperature curve:
- Turn it up to 45°C
- Bring it down to 27°C
- And quickly come back up to 31.5°C
