What is the Tonka bean?

The tonka bean, or coumarou, is the fruit of the Brazilian teak tree (Dipteryx Odorata), a gigantic tree that can grow up to 30 m high. This tree lives in tropical environments and produces an orange coloured fruit containing 2 beans.

The fruit ripens in winter, and the beans are harvested from the ground the following spring. The tonka beans, at this time, are not yet black in colour, but are bright red. The size of a large almond, they will have to dry for a year in the shade before taking on their final appearance.

We will discover them on our shelves in ebony black and crumpled appearance, sometimes covered with white and shiny crystals, measuring about 3 cm long and 1 cm wide.

It is only recently that the Tonka bean has become an essential part of gastronomy. It was the great chefs and pastry chefs who started the trend by perfuming their creations with the complex scent of this spice.

Everyone wants to use this "new" spice, which is driving up prices.
